Some nights, especially in the summer, we don’t feel like standing over a stove cooking. When that happens, we turn to our soups and chili for a healthy, convenient meal. One of our favourite weeknight (or weekend) recipes is an easy black bean nacho dish. The recipe comes together in less than 20 minutes, so it’s perfect for busy nights or even for entertaining.
Our Black Bean Chili features simple ingredients including Ontario black beans, field-grown tomatoes, red peppers, non-GMO corn, carrots and spices. In addition to the local vegetables found in the chili, you can always add on veggie toppings like peppers, tomatoes, lettuce and green onions. These are nachos that you truly can feel good about!
Easy Black Bean Nachos:
- 1 package of our Black Bean Chili
- 1 package of your favourite tortilla chips, we like these ones
- 1 cup shredded cheddar cheese
- Sour cream, served on the side
- Salsa, served on the side
- Optional toppings: sliced jalapenos, chopped sweet peppers, green onions, chopped tomatoes, chopped lettuce
Preheat the oven to 400 degrees. Lay out half of your tortilla chips evenly on a cast iron skillet. Top with half a package of Black Bean Chili and half the cheddar cheese. Add a second layer of tortilla chips and top with the rest of the chili and cheese. Add any of your favourite additional toppings, but save the lettuce and green onions till after baking. Transfer the skillet to oven and bake until cheese is melted and begins to brown, about 10 to 15 minutes. Serve with salsa and sour cream.
Recipe makes enough for two.
