Cucumber Salad with Mint Recipe

Our Vegan Green Lentil Soup is a powerhouse of nutrition. Green lentils are a full of lean protein and fibre, and an excellent source of folate, iron and magnesium. Although this soup is not “hot” like some “curried” dishes, it does have a flavour profile and pungent spicing reminiscent of many curries. This cucumber mint salad offers a refreshing counterpoint to the warm richness of this soup.

Cucumber Salad with Mint Recipe – Serves 2


  • 1 English Cucumber, cut into dice
  • Salt
  • 60 ml yogourt
  • 6 mint leaves coarsely chopped


  1. Sprinkle salt on the diced cucumber. Allow to rest for 30 minutes to leech water from the cucumber
  2. In a bowl, add the yogourt and the chopped mint
  3. Drain the diced cucumber and add to the yogourt mixture
  4. Combine well and serve with piping hot Green Lentil Soup
