Ingredient Spotlight: Butternut Squash

Eat local this season with our ingredient spotlight of the month – butternut squash. Luckily for us here in Canada, it is available all fall and winter long. Winter squashes, including butternut squash, have officially become a staple in our kitchens. Squashes will last for weeks in a cool, dry place, so they are great to keep on hand all season without the fear of creating food waste.

Not only are they delicious in a variety of recipes, but they are incredibly healthy too! Butternut squash is a rich source of dietary fibre and phytonutrients. They have high levels of vitamin A, a natural antioxidant, and rich in B vitamins.

Butternut Squash Recipes

We wanted to share some of our favourite recipes featuring butternut squash! Butternut squash is versatile and can be used in a range of dishes from main dishes, side dishes and soups.

Cutting up a butternut squash can be a bit of a daunting task. If you don’t enjoy preparing it, consider trying our Butternut Squash soup! Mexican Stuffed Butternut Squash – This recipe is a fiesta in itself! The Mexican flavours pair really well with the hearty squash. The best part? The squash creates a bowl so it limits the amount of dishes used at dinner!
