salt and pepper to taste

Garnish:
1 Tbs. cucumber, peeled, seeded, small diced
1 Tsp. green bell pepper, diced
1 Tsp. yellow bell pepper, diced
1 Tsp. onion, diced
½ Tsp. flat leaf parsley, finely chopped

Method:

1. Combine all the ingredients, except the garnish, and puree in a blender.
2. Adjust seasonings.
3. Chill the soup well before serving.
4. For service, plate the individual portions and garnish.

Yield: 3 servings
